Tomato, Red Pepper Puree
Ingredients
1
onion
2
red peppers, roasted, peeled and seeded
2
tomatoes
2 tbs
olive oil
3
portabello mushrooms roasted, and diced
2
sprigs of fresh basil
1 tsp
thyme
tabasco or other hotpepper sauce to taste
salt, pepper
favourite pasta (fettucine is great with this recipe)
Preparation
Pour two tbsp of oil and heat, fry onion til nice and soft.
At the same time broil the peppers until very blackened on the outside - peel and seed and add to onions (approx. 7 min)
Finely dice tomatoes and add to fry pan
Roast mushrooms (approx. 7 min)and add to fry pan
Add sprigs of fresh basil
Let sauce cool then pour into a blender and puree until very smooth
To serve, place a nice scoop of sauce on top of pasta and voila!!!
