Rum-glazed grilled pineapple with pistachios

Ingredients

For 4 people
For the grilled pineapple
1
large, ripe pineapple
100 ml
dark, aged rum (for example a robust Jamaican rum)
80 ml
maple syrup (grade C)
3 tbsp
brown cane sugar
5-6 dashes
angostura bitters
2 tbsp
vegan butter, melted
1
cinnamon stick
1
star anise
To serve
500 ml
vegan chocolate ice cream
100 g
pistachios, roughly chopped and dry roasted in a pan

Preparation

1. The Old Fashioned glaze: Heat a small cast-iron pot on the side burner or directly on the grill. Add the rum, maple syrup, brown sugar, melted vegan butter, cinnamon stick, and star anise. Bring to the boil and simmer over medium heat for about 10 minutes, until the mixture has a syrupy consistency. Remove the pot from the heat and stir in the Angostura bitters.

2. The pineapple: Place the pineapple on the grill for 45–60 minutes and close the lid. It is ready when a dark crust has formed on the outside.

3. Plating and serving: Carefully remove the pineapple from the grill and allow it to cool briefly. Using a large knife, cut off the peel and slice the pineapple into finger-thick rounds. Place 2–3 slices on each plate and add a generous scoop of chocolate ice cream. Pour the rum glaze over the pineapple slices and sprinkle generously with the roasted pistachios. If you like, drizzle a little of the remaining rum glaze over the ice cream as well.

The inspiration for this dessert comes from the classic Old Fashioned cocktail. The sweetness of the pineapple is perfectly balanced by the smoky notes of the grill, the depth of the dark rum, and the bittersweet spice of the Angostura bitters. A masculine, impressive finale to any BBQ.
