Thurgau cider bratwurst in a crusty roll

Ingredients

For 4 people
For the sausage and rolls
4
The Green Mountain bratwursts (or a similar product)
4
rustic bread rolls (Bürli/Weggen)
4 tbsp
crispy fried onions
For the Thurgau apple mustard glaze
1 dl
Thurgau apple cider (sour cider known as «Sure Moscht»)
2 tbsp
coarse sweet mustard
1 tbsp
maple syrup (grade C)
1 tsp
apple cider vinegar
For the smoky sauerkraut topping
200 g
sauerkraut, well drained
½
apple (for example Braeburn), finely diced
1
small onion, sliced into fine strips
1 tbsp
vegan butter
½ tsp
liquid smoke (optional, for a BBQ aroma)
½ tsp
whole caraway seeds

Preparation

1. The sauerkraut topping: Heat a cast-iron pan on the grill (or side burner). Melt the vegan butter and sauté the onion strips until translucent. Add the diced apple and the caraway and fry briefly. Fold in the drained sauerkraut. Season with liquid smoke and simmer over medium heat for about 10 minutes, until the sauerkraut is soft and has developed light roasted aromas. Keep warm.

2. The apple mustard glaze: In a small pot, combine the apple cider, coarse mustard, maple syrup, and apple cider vinegar. Reduce on the grill until the liquid thickens to a syrupy glaze. Remove from the heat.

3. The bratwursts: Prepare the grill for medium direct heat. Place the The Green Mountain bratwursts on the grate and grill them on all sides until golden brown and crispy (about 6–8 minutes). In the last 2 minutes, brush the sausages generously with the apple mustard glaze, basting them so they become nicely sticky and caramelised. Briefly toast the rolls on the grill.

4. Plating and serving: Slice open the toasted rolls. Add a generous spoonful of the warm smoky sauerkraut. Place the hot, glazed bratwurst on top. Drizzle with a little extra glaze and sprinkle with crispy fried onions. Serve immediately while hot.
