Tofu Blueberry Fluff

Ingredients

2 tbs
honey-style sweetener(eg maple syrup)
2 1/2 cups
thawedand drained frozen unsweetened Blueberries
1
package Mori-Nu SilkenTofu

Preparation

In a blender or a food processor, combine all ingredients.

Whip untilsmooth.

Serve chilled.

Makes 4 servings of 2/3 cup each.

Per serving:
125 calories, 3.9 g protein, 2.6 g fat, 23.3 g carbohydrates,7 mg sodium 0 mg cholesterol 61 mg potassium.
