onion, finely chopped
carrots, peeled and diced
cauliflower, divided into small florets
string beans, cut into small pieces
potatoes, peeled and diced
leek, finely sliced
PreparationHeat the oil in a pot.
Add the vegetables and sweat gently for about 5 minutes.
Add the tomato purée and stir well.
Add the vegetable stock and salt and pepper.
Cook for 15 – 20 minutes or until the vegetables are soft.
The folling kitchen utensils are required: libra.
