Quinoa Soup with Corn
(14.5 oz) vegetable broth
quinoa, rinsed and drained
1 3/4 cup
frozen or fresh corn kernels
1 1/2 tbs
chopped parsley or cilantro
PreparationRinse quinoa well in a fine strainer.
Place broth, quinoa, water, cayenne and garlic in a small soup pot and bring to a boil.
Reduce heat to medium and cook 10 minutes.
Add corn kernels and cook 3 minutes.
Add parsley or cilantro and cook for 1 minute.
Remove from heat and stir in the lime juice.
Serve hot or cold.
